Pizzicata from Palermo
Ingredients
- White flour: 400 g
- Honey: 200 g
- Candied citron: 80 g sliced
- Eggs: 4
- Sugar: 1 tablespoon
- Lemon: 1
- Orange: 1
- Extravirgin olive oil: 1 tablespoon
- Olive oil: abundant to fry
- Salt: 1 pinch

Pour flour like a fountain on the rolling board and put in its center salt, grated lemon rind , sugar and eggs ; amalgamate well and add extravirgin olive oil, mixing till to obtain a tender and solid mixture, so slice it and make some little balls.
Brown a lot of olive oil in a frying pan , when it will be hot; plunge little balls in it. Cook well them in every parts, then take them away with a ladle and put them in a dish covered with blotting paper.
Pour honey on a steel casserole, add grated orange rind and dissolve it on a low flame, mixing continuously it ; so pour fryied sweets on it and sliced citron , mix well, put in a dish and let them cool before serving.
